Fishing Saltwater Special

Post by OhioFisher on Mon Jun 02, 2008 3:02 pm

REDFISH NUGGETS:

2 parts yellow corn meal

1 part self rising flour

"Old Bay" seasoning for seafoods etc...

Old Bay gives it a different taste...Do not over season or it will overpower the fish flavor....I actually taste the mixture as I add the spice a little at a time until it tastes like I want my crust to taste....Soak fish nuggets in milk for 30 minutes then roll in flour/meal mix....Milk helps hold a little thicker crust.

Fry 12 to 15 nuggets at a time on medium high until just golden brown or just past.

Here's the fillets..I cut a little of the dark/bloodline out then cut it into nuggets

Cut up some picnic ham for the northern beans.

Nothing fancy but good eats.
